No-sugar energy candies that melt in your mouth – dates, dried fruits, nuts, chia seeds, and a rich sugar-free dark chocolate coating!
Recipe for cooking and ingredients:
• 1 cup pitted dates (120 g / 4 oz)
• ½ cup dried cranberries (80 g / 2.82 oz)
• ½ cup dried apricots (80 g / 2.82 oz)
• ¼ cup pumpkin seeds (30 g / 1.06 oz) – lightly toast & chop
• ¼ cup almonds (30 g / 1.06 oz) – lightly toast & chop
• ¼ cup walnuts (30 g / 1.06 oz) – lightly toast & chop
• ¼ cup hazelnuts (30 g / 1.06 oz) – lightly toast & chop
• 1 tsp dried ginger
• 1 tbsp chia seeds
• 2 tbsp coconut oil
• 1 cup sugar-free dark chocolate (130 g / 4.6 oz)
• 1 tbsp coconut oil (for chocolate coating)
• Extra pumpkin seeds (optional, for decoration)
Instructions
1. Soak dried fruits (dates, cranberries, apricots) in cold water for 5 minutes.
2. Lightly toast pumpkin seeds, almonds, walnuts, and hazelnuts on a dry skillet.
3. Chop toasted nuts & seeds (reserve some pumpkin seeds for decoration).
4. Remove pits from dates, chop all dried fruits.
5. Place dates + apricots + cranberries + 2 tbsp water in a food processor or use immersion blender – blend into a sticky paste.
6. Mix the fruit paste with chopped nuts & seeds + dried ginger + chia seeds + 2 tbsp coconut oil.
7. Form small candies (balls or bars).
8. Freeze for 10 minutes.
9. Melt sugar-free dark chocolate + 1 tbsp coconut oil in a double boiler.
10. Dip each candy in chocolate, place on parchment.
11. Drizzle extra chocolate lines on top, sprinkle with pumpkin seeds.
12. Chill in the fridge for 10 minutes until set.
Serve & Storage
• Serve chilled – chocolate snaps perfectly!
• Keeps in the fridge up to 2 weeks or freezer up to 2 months.
Tips
• For extra flavor: add orange zest or cinnamon.
• Roll in cocoa powder or coconut flakes instead of sesame.
