🟢 做法:
1️⃣ 浸軟的冬菇切薄片備用。
2️⃣ 洗淨的瘦肉切成絲,加入蠔油 1/2 湯匙、胡椒粉少許、生抽 1 茶匙、老抽 1 茶匙、糖 1/2 茶匙、澱粉 1 茶匙、少許油拌勻,醃 30 分鐘。
3️⃣ 熱鍋下油炒熟豬肉,盛出備用。
4️⃣ 另起鍋下油,下薑片和冬菇片爆炒,下銀針粉翻炒2–3 分鐘,放少許鹽調味,沿鍋邊淋入 1 湯匙生抽,加入炒熟的豬肉絲翻炒,最後加入紅辣椒和蔥,翻炒均勻即可出鍋。

Silver needle noodles (rice noodles) – 600 g
Lean pork – 200 g
Shiitake mushrooms – 2 pcs (soaked)
Red chili – 1 pc
Ginger – 1 piece
Spring onion – 1 stalk
Oyster sauce – 1/2 tbsp
Light soy sauce – 1 tsp + 1 tbsp (for marinating pork and stir-frying noodles)
Dark soy sauce – 1 tsp
Cornstarch – 1 tsp
Sugar – 1/2 tsp
White pepper – a pinch
Salt – a pinch
Cooking oil – as needed
🟢 Cooking Directions:
1️⃣ Slice the soaked shiitake mushrooms thinly and set aside.
2️⃣ Cut the washed lean pork into thin strips, then add 1/2 tbsp oyster sauce, a pinch of white pepper, 1 tsp light soy sauce, 1 tsp dark soy sauce, 1/2 tsp sugar, 1 tsp cornstarch, and a little oil. Mix well and marinate for 30 minutes.
3️⃣ Heat oil in a wok and stir-fry the pork until cooked, then remove and set aside.
4️⃣ In another wok, heat oil and stir-fry the ginger slices and shiitake mushrooms. Add the silver needle noodles and stir-fry for 2–3 minutes. Season with a pinch of salt, drizzle 1 tbsp light soy sauce around the edges of the wok, add the cooked pork strips back in, then add the red chili and spring onion at the end. Stir-fry everything evenly and serve.

Mie jarum perak (mie beras) – 600 g
Daging babi tanpa lemak – 200 g
Jamur shiitake – 2 buah (direndam)
Cabai merah – 1 buah
Jahe – 1 potong
Daun bawang – 1 batang
Saus tiram – 1/2 sdm
Kecap asin – 1 sdt + 1 sdm (untuk merendam daging babi dan menumis mie)
Kecap manis pekat – 1 sdt
Tepung maizena – 1 sdt
Gula – 1/2 sdt
Merica putih – sejumput
Garam – sejumput
Minyak goreng – secukupnya
🟢 Cara Memasak:
1️⃣ Iris tipis jamur shiitake yang telah direndam, sisihkan.
2️⃣ Potong daging babi yang sudah dicuci menjadi irisan tipis, kemudian tambahkan 1/2 sdm saus tiram, sejumput merica putih, 1 sdt kecap asin, 1 sdt kecap manis pekat, 1/2 sdt gula, 1 sdt tepung maizena, dan sedikit minyak. Aduk rata dan marinasi selama 30 menit.
3️⃣ Panaskan minyak dalam wajan dan tumis daging babi hingga matang, kemudian angkat dan sisihkan.
4️⃣ Di wajan lain, panaskan minyak dan tumis irisan jahe serta jamur shiitake. Tambahkan mie jarum perak dan tumis selama 2–3 menit. Tambahkan sejumput garam, tuangkan 1 sdm kecap asin di pinggir wajan, masukkan kembali daging babi yang telah dimasak, lalu tambahkan cabai merah dan daun bawang di akhir. Tumis semua bahan hingga merata dan sajikan.

🟢 Paraan ng Pagluluto:
1️⃣ Hiwaing manipis ang binalang shiitake mushrooms at itabi.
2️⃣ Hiwain ang hinugasang lean pork ng manipis, pagkatapos idagdag ang 1/2 tbsp oyster sauce, isang kurot ng white pepper, 1 tsp light soy sauce, 1 tsp dark soy sauce, 1/2 tsp asukal, 1 tsp cornstarch, at kaunting langis. Haluing mabuti at i-marinate ng 30 minuto.
3️⃣ Painitin ang langis sa kawali at igisa ang baboy hanggang maluto, pagkatapos ay alisin at itabi.
4️⃣ Sa isa pang kawali, painitin ang langis at igisa ang hiwa ng luya at shiitake mushrooms. Idagdag ang silver needle noodles at igisa ng 2–3 minuto. Timplahan ng isang kurot ng asin, ibuhos ang 1 tbsp light soy sauce sa gilid ng kawali, ibalik ang nalutong baboy, at idagdag ang pulang sili at sibuyas sa dulo. Haluing mabuti at ihain.
