香菇板豆腐獅子頭
材料:
免治豬肉一斤
布包豆腐3件
冬菇6隻(已預先浸軟及去椗)
雞蛋2隻
辣椒仔一隻
處理:
1. 冬菇,切碎,放大碗內,加入糖半湯匙,撈勻。
2. 豬肉,加入冬菇內。
3. 加入調味料:
a. 生粉2湯匙
b. 油一湯匙
c. 生抽半湯匙
d. 老抽一湯匙
e. 蠔油半湯匙
f. 胡椒粉適量
撈勻,雞蛋2隻,打在豬肉內,撈勻。
4. 預備醬汁:
a. 生抽一茶匙
b. 老抽一茶匙
c. 蠔油一湯匙
d. 胡椒粉適量
e. 糖2茶匙
加入清水500毫升。

1. 大火在鑊內燒熱油500毫升。

3. 豆腐已炸至金黃色,放上碟。
4. 豬肉,做成餅狀,放鑊內大火炸。
5. 肉餅,一面已炸至金黃色,反轉繼續炸。
6. 肉餅,兩面都已炸至金黃色,擎乾油,轉大火。
7. 醬汁,攪勻,倒入豬肉內,冚蓋,大火滾起。
8. 轉中火,加入豆腐,圍住肉餅,冚蓋,燜15分鐘。
9. 加入適量生粉芡至醬汁稠厚。
10. 完成,上碟,可享用。

Ingredients:
Minced pork meat 1 catty
Tofu 3cubes
Mushrooms 6 Nos. (already soaked and stalks removed)
Eggs 2 Nos.
Chili 1 No.
Preparation:
1. Mushrooms, chop well. Put in a big bowl. Add in 0.5 tbsp of sugar, mix well.
2. The pork, put in the mushrooms.
3. Add seasoning:
a. Tapioca starch 2 tbsp
b. Oil 1 tbsp
c. Light soya sauce 0.5 tbsp
d. Dark soya sauce 1 tbsp
e. Oyster sauce 0.5 tbsp
f. Pepper appropriate amount
Mix well. The 2 eggs, break in the pork, mix well.
4. Prepare sauce:
a. Light soya sauce 1 tsp
b. Dark soya sauce 1 tsp
c. Oyster sauce 1 tbsp
d. Pepper appropriate amount
e. Sugar 2 tsp
Add in 500ml of water.
5. Tofu, divide each into 3 shares.
Steps:
1. Heat up 500ml of oil at high flame in wok.
2. Tofu, put in the wok and deepfry.
3. Tofu has been deep fried into golden yellow, put on plate.
4. The pork, make in pie shape. Put in the wok and deepfry at high flame.
5. The pork pie, one side has been deep fried into golden yellow, flip over and continue frying.
6. The meat pie, both sides have been deep fried into golden yellow, drain the oil. Turn to high flame.
7. The sauce, stir well. Pour into the pork. Cover up the wok. Heat up at high flame.
8. Turn to high flame. Add in the tofu, put around the meat pie. Cover up the wok and braise for 15 minutes.
9. Add in appropriate amount of tapioca sauce to make the sauce thick.
10. Complete. Put on plate. Serve.
